Seishin-ryū Chadō Okeiko: Tea Ceremony Workshop
Sǫlveig Þrándardóttir (Æthelmearc), Two (2) hours
Learn the rudiments of wabi-style tea including both the role of the host and the role of the guest. Okeiko means “honorable practice”. This is a mini-workshop intended for beginners who wish to learn how to participate in Japanese matcha tea gatherings. Matcha tea consumption was introduced to Japan around 1191 by Myōan Eisai who promoted its health benefits. Japanese match tea ritual is derived from Zen practice and incorporates many aspects of Japanese high culture.
Both the role of the guest and the role of the host will be introduced. We will begin with walking and bowing and progress to the rudiments of preparing and consuming a bowl of matcha. As this workshop will be online, you may wish to purchase a beginner kit so that you can practice on your own.
If you are interested in purchasing materials for personal use, then you should acquire a guest kit and a “”fukusa””:
A guest kit for men can be acquired at: http://www.teadogu.com/guest-starter-kit-man339.html
A guest kit for women can be acquired at: http://www.teadogu.com/guest-starter-kit-woman339.html
A fuchsia for men can be acquired at: http://www.teadogu.com/fumepunu9si.html
A fukusa for women can be acquired at: http://www.teadogu.com/fuworenu9si.html
While it is possible to save money by ordering directly from Japan, doing so requires dealing with Japanese online storefronts. A note about fukusa. A number #9 fukusa is much easier to manipulate than fukusa with lower numbers. Paying extra is worth the price. A fukusa and a fan are what you need to practice during class. You can substitute a number of items for a fan during the workshop. Please read the online descriptions of the fans carefully if you choose to provide a substitute or acquire a fan from another source.
There are a number of ways to acquire a 袱紗 fukusa. You can even try to make one, but please don’t until you know what they are supposed to be like. There is some controversy over just how old they are. Today, men use slightly larger fukusa than women do. Further, men always use purple fukusa and women typically only use purple fukusa after they have become senior instructors. Regardless, here are purchase options: (1) You can order one from the fellow in Portland http://www.teadogu.com/fukusa.html (Yes, they really are that expensive.) (2) You can order online from any of several tea supply stores in Japan through rakuten.co.jp. (3) You can order used tea equipment from www.net-qp.com/en/ whose prices include shipping. (4) You can always try ebay.
Regardless, the fan is the symbol of the guest, and the fukusa is the symbol of the host in the world of tea.

Mushroom Pasty
PERIOD: France, 14th century | SOURCE: Le Ménagier de Paris | CLASS: Authentic
DESCRIPTION: a mushroom and cheese pie
MODERN RECIPE:
Ingredients
- 1 – 1 1/2 lbs whole button or sliced mushrooms
- 2 tbs. olive oil
- 1/2 cup grated or shredded cheese
- 1/2 tsp. each salt and ginger
- 1/4 tsp. pepper
- 1 – 9″ pie shell (optional)
Directions
Parboil or sauté the mushrooms; drain. Add oil, cheese, and spices. Mix well. Place in pie shell, add lid if desired, and bake at 350° F for 35-40 minutes, or until pastry is a golden brown.
While I prefer using grated parmesan or a combination of parmesan & cheddar cheese, feel free to use any variety of cheese or combination that suites you. Finer cheeses, such as brie also work quite well, and brie itself is very appropriate for a recipe of French origin. Some other period cheeses include farmers and Mozzarella.
This is an absolutely delicious pie and is one of my favourites!

- 1/2 cup onion (chopped)
- 1 cup orange juice (frozen concentrate; about 8 ounces)

- 1 dash black pepper (plus more to taste)
- 1 tablespoon soy sauce
- 3 tablespoons light brown sugar (packed)
- 6 to 8 chicken thighs (boneless)
Directions

Apple and Orange Pie
Ingredients
- 6 medium oranges. I used valencia oranges, though temple oranges, blood oranges, and seville oranges should all work as well. Both bitter (seville) and sweet oranges were available during the 16th C. Don’t use navel oranges; the skins are too thick.
- 4 cups water
- 1 – 1/3 cup honey
- 14 small Macintosh apples. Any small cooking apple should do.
- 1 cup sugar
- 1 tsp cinnamon
- 1/2 tsp ginger
- 2 tbsp rosewater
- 1 tbsp sugar
- 1 – 9″ pie crust and lid
Directions
Soak oranges in water for 24 hours. In a large saucepan, mix honey with 4 cups of the water used to soak the oranges, add the oranges, bring to a boil, and simmer until the peels on the oranges feel soft. Place the oranges in a container and pour on all the syrup. If there is not enough syrup to compleetly cover the oranges when weighted, add a little more water. Put a plate or other heavy object on top of the oranges to hold them under the syrup, cover your container, and let the oranges soak for 24 hours.
When you’re ready to bake, preheat oven to 350F. Slice oranges and remove the seeds. If the syrup has not completely saturated the rinds, boil the slices in the syrup until the rinds are saturated (this should not be necessary). Chop the oranges into small pieces (I used a blender), and mix in 1/3 cup sugar, 1/2 tsp cinnamon, and 1/4 tsp ginger. Peel, core, and quarter your apples, mix them with the remaining sugar, cinnamon, and ginger. Make and roll your pie crust. Place a layer of apples on the bottom of the crust, cover with a layer of oranges. Repeat the layering until you’re out of filling. (Typically, you’ll get two layers of each) Put on the lid, crimp the edges, and bake for 1 hour.
Ten minutes before the pie finishes baking, mix your rosewater and sugar and stir over low heat until it becomes syruppy. Five minutes before the pie finishes baking, remove the pie from the oven, brush on the rosewater syrup, and return the pie to the oven until the hour is up.
History of Montengarde / Castel Rouge
Greeting to the populace of the Kingdom of Avacal, Kingdom of Northshield and the rest of the Knowne World. It is I, Eirik of Two Ravens one of your Event Stewards of the ever magical Virtu-L 12th Night of both the Barony of Montengarde and the Barony of Castel Rouge. I am sponsoring a contest, I seek to find the best moments in the histories of the Barony of Montengarde or the Barony of Castel Rouge, or both if you have that. It can be given either in a narrative style, poem or an essay style. The maximum word count for either is 1000 words.
This Contest shall be judged by their Excellences, Baroness of Montengarde Bóthilðr Sigurðardóttir and Baroness of Castel Rouge Bannthegn Clare Agatha MacLeod, who have agreed to judge this contest.
So what we are seeking is a moment in the history of either Barony and why you value it or why it special to you. It could be court, the battlefield, the tourney field, council meeting, etc. We want to know why it is special to you and why it should be known to others.
So what is a contest without prizes and I have some for you, Master William Bennet has provided a Hand Blown Period glass, I am providing a signed and personalize copy of What Kings Ate and Wizards Drank by Krista D. Ball, which is a delightful book dealing with what people ate in period. I have given it out for various reasons to others SCAians, who all loved it. I read it every 3 or so months since I got it. It is a wonderful work, aimed at Historical fiction and Fantasy authors. I very much enjoy it.

Virtu-L Dance Party
Many of these dances have regional variations. Videos linked may not exactly match Avacal style for step execution. In some cases I have linked one video for learning the steps, and an alternate that will go on the ball playlist as it has better music and/or a longer run-time.
The dance party will be divided in two halves. After about 10 minutes to check in, we’ll play set one, then take a 10 minute break, then play set 2.
